Soto Banjar from South Kalimantan

South Kalimantan, which consists of 13 kabupten / cities with a population of nearly 3.5 million people, has a variety of specialties, including soto Banjar.
For people outside the area of South Kalimantan (Kalimantan) or City of Banjarmasin in particular, may only know the title soto Banjar.

In fact, if examined carefully, actually there are a variety of products soto Banjar that seem similar, but different.

For example, in Banjarmasin, South Kalimantan's capital, there are several products soto Banjar famous and have a "brand" their own, among them-Yani Yani Soto, Soto Abang Amat, Lower Bridge Soto, Soto Kuin / Kuintana and Soto Kampung Melayu.

In addition, there are quite a long time or since the 1960's already existed, namely Soto Pal One in Jalan A. Yani and Soto Pekapuran formerly famous for its chicken "bapukah" (large pieces / without diricih).

Indeed Soto Banjar basic ingredients are the same product, whether processed urang Banjar in perantuan well as those who live in South Kalimantan, which consists of rice or rice cake, chicken and spices to taste like nutmeg, pepper and others.

Similarly prepared soto Banjar people who live in Banjarmasin, materials similar to those processes in that area Hulusungai or "Banua Anam" South Kalimantan.
Similarly, for example soto Banjar in Barabai, the district capital of Hulu Sungai Tengah (HST), South Kalimantan, maybe different flavor with soto Banjar in Palangkaraya, Central Kalimantan (Central Kalimantan).

From each product, there are also peculiar, both in terms of cargo of spices or other materials in the preparation, in order to attract attention and consumer tastes.

However, as one characteristic of the original soto Banjar, using free-range chicken, and without flavoring such as MSG.
But sometimes some are using chicken or other meat types, because the price of chicken is much more expensive. Moreover, the eve of Eid, chicken prices could double the price of chicken.

"The issue of this flavor depending on taste or preferences of each person, so no one would be the size of typical Soto Banjar. Because there are people like a little taste of fat and some are happy with the taste of mediocrity," said Hj. Nurul Lathifah, a resident of Banjarmasin.

For example, there are people who are happy with Soto-Yani Yani or just likes Soto Abang Amat and others. Because of each product that has a way to process and present their own, he said.

Therefore, do not be surprised if each product Soto Banjar is a different flavor when eaten, although essentially the same material, according to Nurul. (SHN/K004 -antara)
